What makes a Fielden whisky? The heritage grains. Working with heritage grains, grown for flavour not yield, our whiskies are distinctly delicious.

Fielden's grains grow deeper roots and take in more nutrients from the soil, so they're full of flavour. It means we're putting the best (completely natural) ingredients into our stills. The grains we grow and the land we grow them on make a difference to our whisky, to farming and to our planet.

In the fields

GRAINS AND CASKS

  • Rye

    Diverse populations of rye that keep cross pollinating year after year: naturally increasing genetic diversity and resilience in every field. Our rye is either used straight from the field or floor malted rye before being mashed.

  • Wheat

    A mixture of several historical varieties of wheat grown together in the same field. Sometimes we grow small percentages of wheat with rye in a 'maslin' mixed crop. It helps increase the diversity in the field.

  • Barley

    A mixture of several historical varieties of both 2-row, 4-row and 6-row grown together. All the barley we use in our recipes is traditionally floor malted in England.

  • New American Oak

    We love American oak with rye, it helps the spirit to mellow through the inner charcoal while diffusing great flavours from white oak.

  • Used American Oak

    New oak can be quite intense when resting spirit for a few years, so used oak barrels allow our spirit to develop as a whole without diffusing much of the oak character.

  • Sauternes wine

    French late-harvested wine with floral and fruity notes. It contributes with sweetness and complements the spicy character of the rye.

  • Moscatel wine

    Portuguese fortified wine with floral and stone fruit notes. It enhances the pastry character of our whiskies.

  • Madeira wine

    A wonderful Portuguese fortified wine with complex and earthy character. Just like an orange wine, it helps to balance our whisky.

Over time our mixed crops of heritage grains adapt - and keep adapting. The crops keep changing, naturally, becoming more resilient and full of flavour as they grow year on year. There’s no need for chemicals because nature’s already doing the work.
