FREQUENTLY ASKED QUESTIONS

FARMING FIELDEN

What is regenerative farming, and how does it relate to Fielden’s whisky?

Farming is inherently extractive, but regenerative farming is a way of working with nature - not against it - to restore soil health, enhance biodiversity and improve the water cycle. People use the phrase ‘regenerative farming’ to mean different things, so here’s what it means to us. At Fielden, we use a clover-based regenerative system, where diverse grains are planted directly into clover and farmed without chemicals. We call this no chem regen farming. This approach nurtures the soil and supports thriving ecosystems, ensuring there’s food and shelter in our fields for more plants, animals and insects - both above and below ground.

What grains do you use and where do they come from?

At the heart of our farming approach is diversity - we combine heritage varieties, landraces, organic grains and crops bred for resilience in low-input systems. This diversity allows our grains to adapt to local conditions and become more robust over time. By saving seeds from the best-performing plants each harvest and introducing new diverse seeds each year, we continuously refine and improve our crops, enhancing yield, diversity and resilience.

In 2025, we are growing over 1,400 acres across 18 farms in England. Our acreage has more than doubled since 2023.

How does Fielden work with farmers?

We partner with farmers who want to work with nature and be kind to their land. By paying by the acre planted, and not yield per se, we shield our farmers from the commercial risks of a ‘poor harvest’. We support our farmers' move to no chem regen, adapting our way of farming if needed but never, ever using chemicals. Happy farmers grow fields full of life - and that makes whisky full of flavour.

Does your way of farming influence the flavour of the whisky?

While it’s difficult to draw a direct link between our farming and the flavours in our whisky, what we do know is this: our fields are full of life, and our whisky is full of flavour.

Our diverse grains grow tall and strong with deeper roots that can absorb more nutrients from the soil. We believe this contributes to a whisky that is full of flavour and it means we’re putting the best (completely natural) ingredients into our stills. Ultimately, what matters most is the result - a distinctly delicious rye whisky that’s changing farming for the better - field by field, harvest by harvest.

Why do you plant your grains in clover?

Clover is a nitrogen-fixing plant, meaning it improves soil fertility by drawing nitrogen from the atmosphere and converting it into a form that plants can use. This process, carried out by symbiotic bacteria in its root nodules, enriches the soil, reducing the need for synthetic fertilisers. Additionally, clover helps improve soil structure, prevents erosion, reduces flood risk and supports biodiversity.

Can I farm for Fielden?

We’re always looking to share our knowledge and encourage more farmers to adopt no chem regen practices. While we may not always be looking for new growers, we’re committed to supporting those interested in farming as we do. If you’re interested in learning more or connecting with our farming partners or seed suppliers, our farming team would be happy to facilitate introductions. You can reach them at farming@fielden.com.

FIELDEN WHISKIES

What tasting notes define Fielden’s house character?

Fielden Rye Whisky is characterised by warm flaky pastry, butter and caramel, with floral and fruity notes on the nose. The finish highlights the freshness of our grain and minty, peppercorn rye spice.

For more information on each whisky, including grain composition, cask types, maturation and expert tasting notes, visit the product pages on our website, where you can download a detailed fact sheet from our Whiskymaker.

Is your whisky certified organic?

We are not organic certified, however we are following most organic principles. The best way to describe our approach is ‘no chem regen’ - regenerative farming without the use of chemicals. In many ways, we believe this goes beyond organic. Organic certification requires meeting several criteria, often including non-continuous field use. Since we usually grow grain year-round and use clover to restore nutrients - rather than following conventional crop rotation - we don’t always fit the current certification rules. Depending on the farm, we either rotate crops or grow different species together.

We value the principles behind organic farming and hope certification frameworks will evolve to recognise regenerative methods like ours, which we believe represent a truly sustainable way forward.

Is Fielden B Corp certified?

We share many of the values behind B-Corp certification, including environmental responsibility and ethical sourcing, but we've chosen not to apply at this time. Our focus is on regenerative farming without the use of chemicals, which aligns with B-Corp principles. Instead of seeking a certification, we’re prioritising action - raising awareness of the issues with industrially grown grain and championing a more sustainable way of farming that benefits the soil, water, wildlife and our planet. We’ll continue to monitor certification schemes and may reconsider in the future if it aligns with our goals.

What’s in Fielden Whisky?

The primary ingredients in Fielden Whisky are diverse grains (rye, wheat and barley), water and yeast. Our grain recipe is predominantly focused on rye, always at least 51% of a mashbill. While yeast and enzymes are essential in the production process, they act as aids and are not present in the final whisky.

Is Fielden Whisky made in England?

Yes. Fielden Whisky is farmed, distilled and bottled in England. All the liquid currently in bottles was distilled and partially matured at our now closed Oxford Artisan Distillery.

Where is your distillery located, and can I visit?

We bring the diversity of our farming into whisky production. As nomadic distillers, our home is in the fields. To get the best from our diverse grains, we distill with our distilling partners across England. We currently produce with Adnams, Yorkshire Distilling Company and Wood Brothers Distillery. We store our casks at Black Bridge Distillery in Luton and St. George Distillery in Norfolk. We celebrate the diversity and engineering of whisky production, exploring different setups, still engineering and characters from different partners. Because of this unique model, we don’t currently offer distillery tours. In the meantime, you can meet the Fielden team, taste our whisky and learn more at events and whisky shows - explore our upcoming events.

What casks do you use for maturation?

Our whisky is mainly matured in a combination of American oak barrels and some light sweet wine barrels, keeping the wine influence subtle so it doesn’t have a heavy impact on the character of our spirit.

We love to experiment - with everything from herbal liqueur casks to orange wines and even different wood species.

American oak works beautifully with rye, helping the spirit mellow through the inner charcoal, as well as releasing great flavours from the white oak. French Sauternes wine casks are a great addition, bringing floral and fruity notes that add sweetness and complement the rye spice. Portuguese Moscatel wine casks enhance the pastry richness of ou

How long is Fielden Whisky matured?

The minimum age of each whisky is detailed in the relevant fact sheet, available to download from our website. Generally, our whiskies are a blend of casks aged between 3.5 and 6 years, sourced from multiple recipes and cask types - and in the future, from more than one distillery.

Does Fielden Whisky contain any additives, like caramel?

No, Fielden Whisky has no additives. Its rich colour comes naturally from the high rye content and the aging process in carefully chosen casks - never from added colourants. The whisky’s flavour comes only from the diverse grains and the cask, with no artificial flavours or preservatives.

Is Fielden Whisky non-chill filtered?

Yes, Fielden Whisky is non-chill filtered. This means it retains all its natural oils, proteins, and flavour compounds, which contribute to its rich texture and depth of character. By skipping the chill filtration process, Fielden Whisky maintains its full-bodied mouthfeel and enhances the complexity of its aromas and flavours. As a result, you may notice a slight natural haze when the whisky is chilled or diluted, a sign of its authenticity and quality.

STORING AND SERVING FIELDEN

Does your whisky go off or lose its quality over time?

Whisky doesn’t expire like perishable foods, but once opened, it will start to oxidise after about six months. For the best flavour, we recommend enjoying it responsibly within two years of opening. It won’t be harmful to drink after this period, but the taste may become duller over time.

What is the best way to store Fielden Whisky to preserve its quality?

Store Fielden Whisky upright in its original bottle. Unlike wine, whisky has a high alcohol content that can degrade a natural cork if stored on its side. Keeping the bottle upright prevents this and protects the seal. For long-term storage—especially over several years—ensure the bottle is kept in a cool, dark place with stable temperature and humidity. There is no need to regularly moisten the cork, though gently tilting the bottle once a year is optional if storage conditions are very dry. Avoid direct sunlight, heat, or temperature fluctuations, particularly once the bottle is opened.

What is the best way to enjoy Fielden Whisky?

Fielden Whisky is best enjoyed naturally, with minimal intervention - just like our farming. Drink it neat because it’s full of flavour and delicious on its own, on the rocks with a large ice block, or in a classic cocktail like a highball with soda or an Old Fashioned with bitters and honey. These serving suggestions bring out the depth of flavours in our diverse grains. But in the end, drink it however you like - we’re not snobby about it!
