What makes a Fielden whisky? The heritage grains. Harvest 2019 is a celebration of the grains we gathered that year. Unlike other whiskies, where the vintage tells you when the whisky went into the cask (with grain from any year), Fielden’s vintage means the whisky is made from the same grain harvest.

Mild weather and summer rain meant the rye we harvested in 2019 was brighter and more delicate than previous years. It makes a whisky that tastes of early summer: fresh, floral and full of flavour.

GRAINS AND CASKS

  • Rye

    Diverse populations of rye that keep cross pollinating year after year: naturally increasing genetic diversity and resilience in every field. Our rye is either used straight from the field or floor malted rye before being mashed.

  • Wheat

    A mixture of several historical varieties of wheat grown together in the same field. Sometimes we grow small percentages of wheat with rye in a 'maslin' mixed crop. It helps increase the diversity in the field.

  • Barley

    A mixture of several historical varieties of both 2-row, 4-row and 6-row grown together. All the barley we use in our recipes is traditionally floor malted in England.

  • Used American Oak

    New oak can be quite intense when resting spirit for a few years, so used oak barrels allow our spirit to develop as a whole without diffusing much of the oak character.

  • STR

    These are barrels recycled from the wine industry, shaved, toasted and re-charred. They allow us to improve our barrel management footprint whilst also benefiting from a more efficient maturation.

  • Sauternes wine

    French late-harvested wine with floral and fruity notes. It contributes with sweetness and complements the spicy character of the rye.

  • Ramandolo wine

    This is either Italian fortified or late-harvested wine that delivers spicy and fruity notes. It enhances the spicy and herbal character of our spirit.

Refreshing herbs and delicate summer fruits, soft pastries: brioche bun, cream and warming apple crumble.
THE FINISH
A pinch of white pepper and fresh thyme.

Harvest 2019 Rye Whisky is made from diverse populations of rye (73%), wheat and barley. Small amounts were malted. The mashes were fermented for four to five days in stainless steel tanks and then double distilled in pot and column stills. The resulting spirits matured in a combination of eight casks: mostly American oak (STR and second-fill casks), with a Sauternes barrique and a Ramandolo barrel. After a slow marriage, the spirit was gradually reduced to 50% ABV.

Over time our mixed crops of heritage grains adapt - and keep adapting. The crops keep changing, naturally, becoming more resilient and full of flavour as they grow year on year. There’s no need for chemicals because nature’s already doing the work.
